Pasta with pesto is a standard meal in many households. Thanks to Meal Prep, you don't have to resort to a ready-made product. What's more, the home-cooked version contains less fat and more fibre from the peas.
Blanch the peas in boiling salted water for one to two minutes. Scald the almonds with hot water, then peel. Pat dry and roast in a non-stick pan without fat until golden brown. Leave to cool. Rinse the mint and basil and shake dry. Set aside a few leaves each for garnishing. Peel the garlic and puree with the herbs, almonds, peas, a little lemon juice and oil until creamy. Add cooking water as required. Mix in the Parmesan and flavour the pesto with lemon zest, salt and pepper. Short pasta such as farfalle, penne or fusilli are suitable for the pesto.
