Start the day healthily: ginger and turmeric porridge for breakfast.
A golden energy boost in 15 minutes: this ginger and turmeric porridge is briefly toasted in coconut oil, allowing the spices to release their full flavour. Creamy oats are combined with berries, orange segments, toasted nuts and linseeds – a warm breakfast that keeps you feeling full for a long time and helps you stay focused throughout the morning.

Fancy a energising start to the day? Then this golden-yellow porridge is just the thing for you! The combination of turmeric and ginger not only adds a splash of colour to your bowl, but also a lovely warming touch that really wakes you up from the inside out.

What makes this breakfast special is that the spices are first briefly toasted in coconut oil – this allows them to release their full flavour and also means your body absorbs them even better. Add to that some creamy porridge, gently simmering in your favourite plant-based drink until it’s nice and creamy.

The whole thing is topped off with a colourful mix of blueberries, juicy orange segments and toasted nuts. The linseeds provide extra omega-3 fatty acids, and the fresh mint adds the perfect finishing touch. In just 15 minutes, you’ll have a breakfast on the table that not only tastes fantastic but also keeps you feeling full and focused for hours. Brain food at its best!

The ingredients

  • 2 tsp coconut oil
  • 1–2 tsp ground turmeric
  • ¼ tsp ground cinnamon
  • ¼ tsp ground ginger
  • 120 g wholemeal oat flakes (small-leaf)
  • 700 ml plant-based drink (unsweetened, e.g. coconut, rice, almond or soya drink)
  • 300 g blueberries (blueberries, blackberries)
  • 2 organic oranges
  • 60 g mixed nuts (e.g. hazelnuts, cashews, pecans)
  • 2 tbsp linseeds
  • Mint for garnishing

Method

Step 1: Gently heat the coconut oil, add the spices, stir and ‘toast’ briefly. Add the oats and the drink, bring to the boil, then leave to soak for 3–4 minutes over a low heat.

Step 2: Wash the berries. Wash one orange under hot water, pat it dry, grate a little zest and mix it into the porridge. Peel both oranges and segment them. Toast the nuts in a frying pan, then chop them roughly.

Spoon the porridge into bowls, top with berries, orange segments, nuts and linseeds, and garnish with fresh mint to taste
